Sausages with a quick onion gravy and sweet potato chips

Serves 4

  • Large sweet potatoes (Approx. 800g/1lb 12oz )
  • 3 Tbsp Vegetable oil
  • 8 Sausages
  • 365g Jar Onion Marmalade.

Preheat the oven to 200 c / Gas 6 / Fan 180 c

Cut the potatoes into wedges and put them into a large roasting tin. Drizzle over 2 tablespoons of the oil and toss the wedges to coat. Roast the 40-45 minutes until cooked through and crisp.

Whilst the potatoes are cooking heat the remaining oil in a frying pan. Add the sausages and cook for 20 mins, turning regularly until cooked through. Drain off any fat and add the onion marmalade, with about 100ml/3.5 fl oz water. Stir well then heat through. Sprinkle the chips with a little salt and serve with the sausages and the gravy.
