T-Bone Steak with Stilton butter

Serves 2

“A T-Bone steak is cut across the sirloin of beef so that each steak includes a piece of sirloin and a piece of fillet.”

Ingredients

2 x T-bone steaks, about 400g /14 oz each

1 Tbsp Olive Oil

For the Stilton Butter

100g / 4oz Stilton Cheese, rind removed

50g / 2oz Butter, softened

1 Tbsp finely snipped chives or spring onion tops

1 Tsp chopped fresh tarragon

Baked Potatoes to serve

  • Brush the steams with oil and season well with freshly ground black pepper. Set aside for about 30 minutes
  • Make the stile butter – mash the cheese in a bowl with a fork, then beat in the butter and herbs. Season to taste with salt and pepper. Shape the butter into a roll, wrap in foil/greaseproof paper and chill until the steaks are ready.
  • Preheat the grill to high, or heat a large ridged cast iron grill pan until very hot. Season the steaks with sea salt, then grill to your liking – allow about 4-5 minutes cooking on each side for a medium/pink steak.
  • Serve the steak topped with one or two slices of the stilton butter, and serve the remaining butter in hot baked potatoes
