BBQ Rubs

Hot Chilli Rub

2 Tbsp Ground Cumin

2 Tbsp Chopped Chilli

1 Tbsp Chilli Flakes

1 1/2 Tsp Ground Coriander

1 Tbsp Cocoa Powder

1 Tsp Paprika

1 1/2 Tsp Light Muscovado Sugar

1 Tsp Ground Cinnamon

1 1/2 Tsp Garlic Salt (we used Maldons)

1 1/2 Tsp Mixed Dried Herbs

1 Tsp Ground Black Pepper

Rapeseed oil to mix

Mix all of the ingredients together in a small bowl then rub in to you meat (if you are unlikely to use it all mix all of the dry ingredients together and put in a small container). Then add the oil only to the amount of the rub you need for that meal – the rest will keep for up to 1 month.

Moroccan Rub

Handful of fresh mint leaves chopped.

2 Tbsp Ground Coriander

1 Tsp Ground Ginger

1 Tbsp Ground Cumin

1 Tbsp of  Paprika

1 Pinch of Jalapeno Pepper (or to taste)

1 Tsp Ground Cinnamon

Rapeseed oil to mix

Mix all of the ingredients together in a small bowl then rub in to you meat (if you are unlikely to use it all mix all of the dry ingredients together and put in a small container). Then add the oil only to the amount of the rub you need for that meal – the rest will keep for up to 1 month.

Jamaican Chilli Rub

1 Tsp of Garlic Salt (we used Maldons)

1/4 Tsp of Jalapeno Pepper (or to taste)

1 Tsp Ground Allspice

1/2 Tsp Ground Nutmeg

1/2 Tsp Ground Ginger

1/2 Tsp Ground Black Pepper

1/4 Tsp Ground Cinnamon

1/2 Tsp Dried Mixed Herbs

Juice of 1 Lime

Chopped Chilli to taste

Rapeseed oil to mix
